Hungarian Kalács French Toast with Banana & Mascarpone

Sometimes life feels like too much.
Too loud. Too fast. Too demanding.

And when it does, I go back to the kitchen.
Not to impress. Not to create content.
Just to feel home again.

My son doesn’t like bananas. He won’t touch them raw.
But if I slice one, caramelize it, wrap it in buttery kalács, and hide it under a golden crust of egg and sugar…
He eats it like a little celebration.

And honestly? So do I.

Hungarian Kalács French Toast with Banana & Mascarpone

A hug in food form – even for banana skeptics
(Serves 4)

📝 Ingredients:

  • 1 loaf of fonott kalács (Hungarian braided sweet bread)

  • 4 tbsp mascarpone

  • 1 ripe banana

  • 1 handful dark chocolate chips or pasztilla

  • 2 eggs

  • 50 ml milk

  • 2 pinches brown sugar

  • Oil for frying

  • Optional for serving: cinnamon powdered sugar, maple syrup


🥄 Instructions:

  1. Slice the kalács into even pieces — aim for 8 slices to create 4 “sandwiches.”

  2. Spread a generous spoonful of mascarpone on each slice.

  3. Thinly slice the banana, and layer a few pieces onto half of the kalács slices.

  4. Press in a few chocolate chips — trust me, this part matters.

  5. Top each with another slice of kalács, like a sweet sandwich.

  6. In a bowl, whisk together the eggs, milk, and brown sugar.

  7. Dip each sandwich into the egg mixture, coating both sides.

  8. Heat a finger’s width of oil in a non-stick pan and fry each sandwich until golden brown on both sides — just like French toast (aka bundás kenyér).

  9. Drain on paper towel. Serve warm with a dusting of cinnamon sugar and a drizzle of maple syrup.
